
According to recent reports, DSM has expanded its Delvo Guard fresh dairy strain range with four new strains that help extend the shelf life of yogurt while balancing taste and texture, in order to reduce yogurt waste. The new strains include Delvo Guard 302 and 303, which can prevent or delay the growth of spoilage organisms for days or even weeks, and Delvo Guard 304 and 305, which have a low post-acidification impact while preventing microbial spoilage. DSM mentioned that the new strains provide dairy manufacturers with solutions to optimally control post-acidification, gas production, and decolorization, while improving the creamy taste and extending shelf life.
